Perfecting Orchard to Oil.

 

Site Selection

The task of finding suitable land for an olive orchard, with the right elevation and microclimate, presented a challenge. Due to the specific chilling requirements for fruit production, our search was limited to the area of Maui that extends from Upper Olinda to Kamaole in Keokea, at elevations between 2,000 and 4,000 feet. We soon discovered that if a region was conducive to growing bananas and papayas, it was unlikely to support olive cultivation. Olives thrive in areas with a chill factor, much like those where peaches, plums, and apples are commonly found. Eventually, we managed to secure a site within this narrow strip of land, and embarked on the endeavor of establishing Maui's first commercial olive grove. Over time, we have assisted in planting and setting up an additional 8 orchards, varying in size, resulting in a total of nearly 10,000 olive trees now thriving in the ground.

 

Olive Cultivar

We've already discovered the essential selection of trees that thrive on Maui. This includes the likes of Koroneiki, Arbequina, Arbosana, Frantoio, Pendolino, Lucino, Picual, Manzanillo, and numerous others from Greece, Spain, and Italy. As we gain more experience with these trees, the range of varieties available for both table use and oil production will continue to grow.

Note: This text maintains the original HTML markup. can process approximately 1,000 lbs per milling session (about 2-3 hours) and produces between 40-50 gallons of oil per ton of olives.  The press is highly efficient and separates the olive paste from the oil and water in a three phase process.  We are exploring sustainable options for the use of the byproducts which could include beauty products, additives for animal feed and compost for our orchard. About 80% of the fruit is a byproduct which leaves lots of room for creativity.  The mill allows for varietal (single variety) as well as batch (multiple varieties).  Having our own mill allows us to produce one of a kind blends of oil using freshly picked Maui grown olives.
